Nutrition Services
Nutrition Services supports your overall well-being and academic success through evidenced-based and patient-centered nutrition education and counseling in individual and group settings. Our registered dietitians specialize in the prevention and management of nutrition-related diseases, mental health promotion and creating personalized eating plans that meet your needs. By highlighting nutritional adequacy, food-related behaviors/skills, weight neutrality and body attunement, we aim to support you in developing a lifelong healthy relationship with food, your body and movement.
Our Dietitians Provide
- Free nutrition education and skills workshops led by a registered dietitian and hosted throughout the year.
- Short-term individual nutrition assessments and counseling with a registered dietitian and support building your aftercare plan.
Individual Nutrition Assessment and Counseling
Our dietitians work closely with the UHS medical and CMHC counseling staff to ensure quality of care. Please note that dietitians cannot provide medical or mental health diagnoses, lab orders, or specialty referrals. We encourage meeting with your primary care provider to address these needs.
Common reasons students work with a dietitian
- Medical diagnosis with significant nutrition implications including diabetes, hypoglycemia, polycystic ovarian syndrome, high or low blood pressure, fatty liver and/or high cholesterol.
- Digestive problems including food intolerances, food allergies, celiac disease, irritable bowel syndrome and inflammatory bowel disease.
- Mental health and eating concerns such as anxiety, depression, ADHD, eating disorders and persistent body image distress.
- Recent changes in appetite, energy needs, weight, food tolerance or digestive function.
- Difficulty navigating the nutrition science landscape and/or managing one’s nutrition-related self-care.
- Desire to explore an interest in and the nutritional implications of specific dietary patterns (plant-based, vegetarian or vegan, etc.).
During Your First Session
- You will meet your dietitian in person to complete your initial nutrition assessment, discuss your treatment plan recommendations, and receive help setting your personalized nutrition-related goals. Follow ups may be held virtually or in-person depending on preference and availability.
- To ensure our entire Longhorn student body has access to our services during their time at UT, we provide short-term individualized support to students. If at any point you need more or ongoing support to achieve your goals, we will assist with connecting you to a dietitian off campus or to a higher level of care. Please note that Nutrition Workshops are open to all enrolled UT students and may be attended as often as desired.
Appointment Scheduling Process
- Schedule your appointment by calling 512-475-8010 (Monday-Friday, 8 a.m.-5 p.m.).
- Allow one hour and 15 minutes for your initial appointment.
- After you have scheduled your initial appointment, log into the MyUHS/CMHC portal at least 24 hours before your visit to fill out a related questionnaire.
- Follow-up appointments will be scheduled at the end of your appointment by your registered dietitian. Please allow up to 25 minutes for brief follow-up and up to 45-60 minutes for follow-up appointments.
- If it has been more than 8 weeks since your last appointment, you will be scheduled for an extended follow-up (45-60 minutes).
Communicating with Your Dietitian
For scheduling or rescheduling issues, you may call the main UHS appointment line at 512-471-4955 or reach out to your dietitian through a secure message in the MyUHS/CMHC portal. Questions about meal plans, food journal entries and nutrition guidance will be addressed during follow-up sessions.
Charges and Insurance for Nutrition Assessments and Counseling
To help keep the cost of nutrition services office visits low, the Student Administrative Health Fee will cover 50% of the student’s financial responsibility, if any, for this charge. The patient’s responsibility depends on whether they are insured, whether UHS accepts their insurance, and how much their insurance covers for nutrition services. On-Time Arrival for Appointments
Arrive 10 to 15 minutes early for check-in. If you arrive more than 10 minutes late to a scheduled appointment, your appointment will be rescheduled and you may be charged a $25 late fee.
Meet the Dietitians

Jennifer Barnoud, MS, RDN, LD, CEDS-C
Jennifer Barnoud is a master’s level dietitian and Certified Eating Disorder Specialist-Consultant with over ten years of experience working with college students. Her undergraduate education at Middle Tennessee State University, where she studied psychology, nutrition and food science, and recreation and leisure studies, laid the foundation for her nuanced and holistic approach to nutrition counseling and education. In her free time, she enjoys moments of connection with the natural world, moving her body through yoga and pottery and spending quality time with her family, friends and pets.

Marissa Buckley, MS, RD, LD
Marissa Buckley is a master's level dietitian originally from Northern California. She focuses on nourishing the body, while allowing you to continue to enjoy the foods you love. Marissa will work to create a personalized nutrition plan that aligns with your lifestyle, preferences and nutrition goals to create long-term sustainable lifestyle changes. When Marissa is not in the office, you can often find her outdoors with her dog Pancakes.

Erika Garcia-Villatoro, PhD, RDN, LD
Erika Garcia-Villatoro is a dedicated and caring clinical dietitian with a strong background in applied nutrition research, teaching, advocacy for diversifying dietetics and community outreach programs. She graduated with a bachelor’s degree in clinical nutrition from the Autonomous University of Yucatan, Mexico, where she practiced as a clinical dietitian before obtaining her doctoral degree in nutrition and Registered Dietitian credentials at Texas A&M University in 2021. In her role as a dietitian at UHS, Erika aims to provide weight-neutral medical nutrition therapy that promotes physical and mental health through the principles of health at every size, intuitive eating and a culturally inclusive approach to wellness. In her free time, she enjoys reading, painting, searching for the best barbacoa tacos in town and exploring parks with her partner and her dog Willow.
